Vietnamese Chicken and Mint Salad

Serves 2-4

Ingredients

  • 1 chilli, finely choppped
  • 1 fat garlic clove, crushed
  • 1 tbsp sugar
  • 1 1/2 tsp rice vinegar
  • 1 1/2 tbsp lime juice
  • 1 1/2 tbsp fish sauce
  • 1 1/2 tbsp veg oil
  • 1 onion, finely sliced
  • 200g white cabbage, shredded
  • 1 medium carrot, grated
  • 200g cooked chicken breast, shredded
  • 40g mint

Method

  1. Combine the chilli, garlic, sugar, vinegar, lime juice, fish sauce, veg oil, some black pepper and the onion in a bowl. Put to one side for half an hour.
  2. In a separate bowl, mix the cabbage, carrot, chicken and mint.
  3. Pour over the onion dressing from (1) and mix well. Season as necessary.
