Turkey Stuffed With Spinach And Cheese

Ingredients
- 2 tsp olive oil
- knob of unsalted butter
- ½ red onion, peeled and diced
- few thyme leaves
- large handful of spinach leaves
- salt and freshly ground black pepper
- 110g/4oz Cheshire cheese, grated
- touch of grated nutmeg
Method
- Preheat the oven to 220ºC.
- Heat the oil and butter in a large non-stick saucepan and sauté the onion for 2-3 minutes to soften.
- Add the thyme leaves, spinach and seasoning and heat for a few minutes to wilt the spinach.
- Remove from the heat and stir in the cheese and nutmeg.
- Lay the turkey escalope flat on a chopping board.
- Spoon the spinach and cheese mixture onto the turkey and roll up. Secure using cocktail sticks.
- Transfer the turkey to the oven and cook for 20-25 minutes or until cooked through.
- Remove from the oven and allow to rest for a minute. Slice in half on the diagonal to serve.
