Ingredients
- 1.5kg turkey mince (can use beef mince)
- 2 large onions, minced
- 2 tbsp olive oil (leave out for beef mince since it’s oily)
- salt and pepper
- 1 tsp thyme
- 3 tbsp Worcester sauce
- 125 ml chicken stock
- 2 tsp tomato puree
- 6 tbsp bread crumbs
- 3 eggs
Method
- Preheat the oven to 170ºC
- Fry the minced onions, salt, pepper and thyme in a pan with butter until they become soft.
- In a large bowl, place the fried onions and the other ingredients, except for the ketchup. Mix well using your hands until sticky.
- Cover the surface of a plate with a thin layer of oil.
- Form the mixture from 3 into the shape of loaf and place on the oiled plate.
- Coat the meatloaf with ketchup on the meatloaf (optional).
- Place the meatloaf in the top of the oven and put a baking tray with boiling water underneath. Bake it for 1-1 ½hour until the meat is well-done, but still moist.
