Turkey Fillets With Anchovy, Gherkins And Dill
Serves 4
Ingredients
- 5 anchovy fillets (can use anchovy paste instead)
- 4 turkey breast fillets, beaten as thinly as possible
- 2 tbsp vermouth
- 2 gherkins, finely chopped
Method
- Heat the anchovy fillets with some olive oil in a frying pan until the fillets begin to melt.
- Flash fry the turkey in the same pan cooking for a couple of minutes each side. Remove the meat to a warm serving plate.
- Add the vermouth and chopped gherkins to what remains in the pan and let the liquid reduce and sizzle for a minute or so.
- Pour over the turkey and sprinkle with dill.
