Turkey Fillets With Anchovy, Gherkins And Dill

Ingredients

  • 5 anchovy fillets (can use anchovy paste instead)
  • 4 turkey breast fillets, beaten as thinly as possible
  • 2 tbsp vermouth
  • 2 gherkins, finely chopped

Method

  1. Heat the anchovy fillets with some olive oil in a frying pan until the fillets begin to melt.
  2. Flash fry the turkey in the same pan cooking for a couple of minutes each side. Remove the meat to a warm serving plate.
  3. Add the vermouth and chopped gherkins to what remains in the pan and let the liquid reduce and sizzle for a minute or so.
  4. Pour over the turkey and sprinkle with dill.
