Turkey Burgers With Apricots And Carrots With Tomato Chutney
Serves 4
Ingredients
olive oil
1 large onion, finely chopped
2 garlic cloves, crushed
85g porridge oats
450g minced turkey
100g dried apricots, finely chopped
1 large carrot, grated
1 egg, beaten
Rolls and salad to serve
Chutney
olive oil
1 finely chopped onion
1 garlic clove, crushed
1 tbsp sundried tomato paste (or blitz a few sundried tomatoes)
400g can chopped tomatoes
pinch of sugar
Method
For the chutney:
Fry the onions for 5 minutes until softened. Stir in the crushed garlic and cook for a further minute.
Add the sundried tomatoes, the tinned tomatoes and the sugar. Gently cook for 20-25 minutes until rich and thick. Leave to cool before serving.
For the burgers:
Heat oven to 200ÂșC
Gently fry the onions for 5 minutes until soft. Add the garlic and cook for a further minute. Add the oats and fry for 2 minutes more. Tip into a bowl and leave to cool.
Add the rest of the ingredients to the cooled mixture and mix well with your hands. Season to taste and shape into 8 patties.
Transfer to a baking sheet and cook in the oven for 10-15 minutes.
