Turkey Burgers With Apricots And Carrots With Tomato Chutney

Serves 4

Ingredients

  • olive oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, crushed
  • 85g porridge oats
  • 450g minced turkey
  • 100g dried apricots, finely chopped
  • 1 large carrot, grated
  • 1 egg, beaten
  • Rolls and salad to serve

Chutney

  • olive oil
  • 1 finely chopped onion
  • 1 garlic clove, crushed
  • 1 tbsp sundried tomato paste (or blitz a few sundried tomatoes)
  • 400g can chopped tomatoes
  • pinch of sugar

Method

  1. For the chutney:
  2. Fry the onions for 5 minutes until softened. Stir in the crushed garlic and cook for a further minute.
  3. Add the sundried tomatoes, the tinned tomatoes and the sugar. Gently cook for 20-25 minutes until rich and thick. Leave to cool before serving.
  4. For the burgers:
  5. Heat oven to 200ÂșC
  6. Gently fry the onions for 5 minutes until soft. Add the garlic and cook for a further minute. Add the oats and fry for 2 minutes more. Tip into a bowl and leave to cool.
  7. Add the rest of the ingredients to the cooled mixture and mix well with your hands. Season to taste and shape into 8 patties.
  8. Transfer to a baking sheet and cook in the oven for 10-15 minutes.
  9. Serve in the rolls, with the salad and chutney.
