Tomato Cheeseburgers
Also known as ‘Sloppy Joes’
Ingredients
- 1 tab. oil
- 1 medium onion, finely chopped
- 250g mince beef
- 1 can Campbell’s condensed tomato soup
- 100g button mushrooms
- Salt & Pepper
- 1/4 tsp. dry mustard (could use herbs or chilli flakes)
- 150g grated cheese, soft white rolls.
Method
- Heat the oil in a pan (medium heat) and add the onion and soften. Turn up heat and add the mince and cook until browned. Stir in the soup, mustard (could use herbs or chilli flakes) and salt & pepper. Simmer gently for 10 minutes.
- Chop up the mushrooms and sauté in a little oil until starting to soften, add to mince mixture. Cook again for 10 minutes.
- Take off the heat and stir in a 1/3rd of the cheese.
- Cut rolls in half and toast cut side up.
- Spoon mixture onto rolls and sprinkle with remaining cheese. Put under a medium grill to brown. Do not put rolls too near the heat or will burn.
