Tomato And Plum Soup

Serves 4

Ingredients

  • 1 onion, chopped
  • 450g red plums, stoned
  • 450g tomatoes, chopped
  • 300ml tomato juice
  • 575ml chicken stock
  • fresh thyme sprig
  • salt and pepper
  • (optional – parsley or crème fraîche for decoration)

Method

  1. Soften the onion without browning.
  2. Add all the other ingredients
  3. Bring to the boil and simmer for 25 mins, until the plums are soft.
  4. Remove the thyme sprig and liquidise.
  5. Heat through and serve (with parsley or crème fraîche)
