Tomato And Plum Soup
Ingredients
- 1 onion, chopped
- 450g red plums, stoned
- 450g tomatoes, chopped
- 300ml tomato juice
- 575ml chicken stock
- fresh thyme sprig
- salt and pepper
- (optional – parsley or crème fraîche for decoration)
Method
- Soften the onion without browning.
- Add all the other ingredients
- Bring to the boil and simmer for 25 mins, until the plums are soft.
- Remove the thyme sprig and liquidise.
- Heat through and serve (with parsley or crème fraîche)
