The Union Square Cafe's Bar Nuts

Serves 4

Ingredients

  • 500g assorted unsalted nuts
  • 2 tbsp coarsely chopped fresh rosemary from two 8cm sprigs)
  • ½ tsp cayenne pepper
  • 2 tsp dark muscovado sugar
  • 2 tsp Maldon salt
  • 1 tbsp unsalted butter, melted

Method

  1. Preheat the oven to 180ºC
  2. Toss the nuts in a large bowl to combine and spread them out on a baking sheet. Toast in the oven till they become golden-brown (about 10 mins)
  3. In a large bowl, combine the rest of the ingredients.
  4. Thoroughly toss the toasted nits in the spiced butter and serve warm.
