Ingredients
- 500g turkey mince
- 85g fresh breadcrumbs
- 3 tbsp red Thai curry paste
- ½ bunch spring onions, finely chopped
- 1 egg, beaten
- 1 tbsp sunflower oil
Mango pickle mayo
- ½ large mango, chopped into chunks
- 6 tbsp mayonnaise
- 2 tbsp lime pickle
- handful of roughly chopped coriander
Spicy Mango Salsa
- ½ large mango, finely chopped
- handful of roughly chopped coriander
- juice ½ lime
- 1 deseeded and finely chopped fat red chilli
To serve
- 4 rolls, split
- handful baby gem leaves
- ½ cucumber, peeled and sliced
Method
- Place the mince, breadcrumbs, curry paste, spring onions and egg into a large bowl. Season lightly, then mix well with your hands to combine. Divide into 4 and shape into burgers. Chill for 20 mins.
- Meanwhile, make the Mango Pickle Mayo and the Spicy Mango Salsa by mixing together the respective ingredients in small bowls. Put aside.
- Brush the burgers with oil and grill for 7 mins each side, or until firm, golden and cooked through. Alternatively, cook on the BBQ.
- Once cooked, toast the rolls, cut-side up, under the grill. To serve, top the rolls with a turkey burger, add lettuce, cucumber, tomato slices and a spoonful of mayo or salsa and put the lids on.
