Put all the rub ingredients into a blender and process. Add enough oil to bring this together into a paste. Rub this over the dried skin of the chicken.
Smash the lemongrass and ginger for the stuffing with a rolling pin to bruise and place this inside the cavity of the chicken, along with the lime.
Cover the chicken with foil for the first hour of cooking and then roast uncovered until the chicken is cooked.
