Thai Chicken Cakes With Sweet Chilli Sauce

Ingredients

  • 2 chicken breasts, cubed
  • 1 garlic clove, chopped
  • small piece ginger, chopped, or 1 tsp ginger paste
  • 1 small onion, chopped
  • 4 tbsp coriander or 1 tsp dried
  • 1 chilli
  • sweet chilli sauce and lime wedges to serve

Method

  1. Blitz the chicken, garlic, ginger, onion, coriander, chilli and seasoning into a food processor until finely ground and well mixed.
  2. Shape about 6 more cakes from the mixture.
  3. Fry the cakes over a medium heat for about 6-8 minutes.
