Sweet Mustard Chicken/Salmon With Garlicky Vegetables

Ingredients
- 4 servings of new potatoes, halved
- 1 tbsp wholegrain mustard
- juice of 1 small orange
- 2 tsp clear honey
- 4 chicken breasts/salmon fillets
- 4 peppers, cut into strips
- 250g sugar snaps
- 2 tbsp garlic infused oil
Method
- Mix together the mustard, orange juice and honey. Coat the chicken/salmon and leave to marinade.
- Preheat oven to 180ÂșC.
- Boil the potatoes until tender.
- Pour the potatoes into an oven dish with the peppers and sugar snaps. Coat with the garlic infused oil and season.
- Put the chicken/salmon on top and pour over the marinade.
- Bake for 20-25 mins until done.
