Sweet Mustard Chicken/Salmon With Garlicky Vegetables

Serves 4

Ingredients

  • 4 servings of new potatoes, halved
  • 1 tbsp wholegrain mustard
  • juice of 1 small orange
  • 2 tsp clear honey
  • 4 chicken breasts/salmon fillets
  • 4 peppers, cut into strips
  • 250g sugar snaps
  • 2 tbsp garlic infused oil

Method

  1. Mix together the mustard, orange juice and honey. Coat the chicken/salmon and leave to marinade.
  2. Preheat oven to 180ÂșC.
  3. Boil the potatoes until tender.
  4. Pour the potatoes into an oven dish with the peppers and sugar snaps. Coat with the garlic infused oil and season.
  5. Put the chicken/salmon on top and pour over the marinade.
  6. Bake for 20-25 mins until done.
