Sweet and Sour Pork Tenderloin
Serves 4
Ingredients
- 900g diced pork tenderloin
- 4 tbsp soy suace
- 1 orange, zested and tbsp of juice
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp lemon juice
- 1 tbsp tomato ketchup
- 1 tbsp brown sugar
- 1 tbsp fresh ginger, grated
Method
- Mix all the ingredients together, cover and leave in the fridge for 6 hours, stirring from time to time.
- Cook in the oven at 170ºC for 1-1½ hours until tender.
- The juices may be thickened with cornflour.
- Decorate the dish with thinly sliced oranges.
