Sweet and Sour Pork Tenderloin

Serves 4

Ingredients

  • 900g diced pork tenderloin
  • 4 tbsp soy suace
  • 1 orange, zested and tbsp of juice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 1 tbsp tomato ketchup
  • 1 tbsp brown sugar
  • 1 tbsp fresh ginger, grated

Method

  1. Mix all the ingredients together, cover and leave in the fridge for 6 hours, stirring from time to time.
  2. Cook in the oven at 170ºC for 1-1½ hours until tender.
  3. The juices may be thickened with cornflour.
  4. Decorate the dish with thinly sliced oranges.
