Stuffed Chicken Breast With Basil & Garlic

Ingredients
- 3 chicken breasts
- A handful of flatleaf parsley
- 50-75 ml double cream
- 3 garlic cloves, peeled and crushed
- Olive oil
- 100 g cherry tomatoes
For the sauce:
- 50 ml white wine
- 75 ml double cream
- A handful of basil leaves
Method
- Heat oven to 220˚C
- Chop a chicken breast into cubes, put in a food processor with the parsley, cream, garlic & S & P.
- Blend to combine.
- Flatten out the 2 chicken breasts, put stuffing in centre of each, fold over and secure with cocktail sticks.
- Heat oil in a pan, add chicken and brown lightly on all sides.
- Add cherry tomatoes, and then transfer pan to oven. Bake for 10-15 mins until cooked through.
- Meanwhile, heat the wine and cream together in a small pan. Stir in the basil, S & P.
- Take the chicken out of the oven, remove cocktail sticks. Allow to rest for a few minutes and then serve with the sauce.
- Good with pasta.
