Stuffed Chicken Breast With Basil & Garlic

Serves 2

Ingredients

  • 3 chicken breasts
  • A handful of flatleaf parsley
  • 50-75 ml double cream
  • 3 garlic cloves, peeled and crushed
  • Olive oil
  • 100 g cherry tomatoes

For the sauce:

  • 50 ml white wine
  • 75 ml double cream
  • A handful of basil leaves

Method

  1. Heat oven to 220˚C
  2. Chop a chicken breast into cubes, put in a food processor with the parsley, cream, garlic & S & P.
  3. Blend to combine.
  4. Flatten out the 2 chicken breasts, put stuffing in centre of each, fold over and secure with cocktail sticks.
  5. Heat oil in a pan, add chicken and brown lightly on all sides.
  6. Add cherry tomatoes, and then transfer pan to oven. Bake for 10-15 mins until cooked through.
  7. Meanwhile, heat the wine and cream together in a small pan. Stir in the basil, S & P.
  8. Take the chicken out of the oven, remove cocktail sticks. Allow to rest for a few minutes and then serve with the sauce.
  9. Good with pasta.
