250g vine ripened tomatoes (chopped) or 400g can chopped tomatoes
2-3 fat garlic cloves, chopped
2tbsp extra virgin olive oil
pinch dried oregano or marjoram
Method
Make the sauce. Place the chopped tomatoes in a pan with the garlic, oil, oregano/marjoram and season to taste. Bring to the boil and simmer for 10 minutes, stirring once or twice. Take off the heat, stir in the basil and set aside.
