Spicy Roast Chicken

Serves 4

Ingredients

  • 50g ground almonds
  • 50g desiccated coconut
  • 1 medium onion, finely chopped
  • 1 inch root ginger, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tsp chilli powder
  • 1½ tsp garam masala
  • 1 tsp salt
  • 150 ml natural yoghurt
  • 4 chicken quarters, skinned

Method

  1. Pre-heat the oven to 160°C.
  2. Dry roast the almonds and coconut then set aside.
  3. Fry the onion until golden brown.
  4. Mix the cooked ingredients with the remaining ingredients except the chicken in a bowl.
  5. Place the chicken pieces in the bottom of an oven proof dish and then cover with the mixture.
  6. Cook for 35-45 minutes until the chicken is cooked through.
