Ingredients
- 50g ground almonds
- 50g desiccated coconut
- 1 medium onion, finely chopped
- 1 inch root ginger, finely chopped
- 2 cloves garlic, finely chopped
- 1 tsp chilli powder
- 1½ tsp garam masala
- 1 tsp salt
- 150 ml natural yoghurt
- 4 chicken quarters, skinned
Method
- Pre-heat the oven to 160°C.
- Dry roast the almonds and coconut then set aside.
- Fry the onion until golden brown.
- Mix the cooked ingredients with the remaining ingredients except the chicken in a bowl.
- Place the chicken pieces in the bottom of an oven proof dish and then cover with the mixture.
- Cook for 35-45 minutes until the chicken is cooked through.
