Ingredients
- 3 garlic cloves, roughly chopped
- knob fresh ginger, roughly chopped
- zest and juice of one orange
- 3 spring onions, roughly chopped
- 2 tbsp clear honey
- 1 tbsp light soy sauce
- 2 tbsp vegetable oil
- 4 skinless chicken breasts, cubed
- 20 button mushrooms
- 20 cherry tomatoes
- 2 large red peppers, cut into 10
- (vary veg. as please)
- 20 wooden skewers, softened
Method
- Grind the garlic, orange zest and spring onions to a paste in a food processor. Add the honey, orange juice, soy sauce and oil. Blend again and pour over the chicken. Leave to marinade for at least an hour. Toss in some of the veg. for the last half hour.
- Thread the chicken and veg. onto 20 skewers.
- Cook on a griddle pan for 7-8 mins each side or until the chicken is cooked through and golden brown. Turn regularly and baste from time to time.
