Seared Salmon With Cucumber, Ginger And Hot Chilli Salsa
Serves 4
Ingredients
- 1 small or half large cucumber, diced
- 2 red chillies, finely chopped
- small handful of chopped, fresh, flatleaf parsley
- small handful of chopped fresh mint
- 1 tbsp grated ginger
- 4 salmon fillets
- olive oil
- 250g crème fraiche
Method
- Mix together the diced cucumber, chilli, parsley, mint and ginger. Set aside.
- Brush the fillets on both sides with olive oil and season.
- Sear the salmon on each side in a large frying pan and cook through.
- Divide between four plates. Spoon a dollop of crème fraiche on each fillet and top with salsa.
