Seared Salmon With Cucumber, Ginger And Hot Chilli Salsa

Serves 4

Ingredients

  • 1 small or half large cucumber, diced
  • 2 red chillies, finely chopped
  • small handful of chopped, fresh, flatleaf parsley
  • small handful of chopped fresh mint
  • 1 tbsp grated ginger
  • 4 salmon fillets
  • olive oil
  • 250g crème fraiche

Method

  1. Mix together the diced cucumber, chilli, parsley, mint and ginger. Set aside.
  2. Brush the fillets on both sides with olive oil and season.
  3. Sear the salmon on each side in a large frying pan and cook through.
  4. Divide between four plates. Spoon a dollop of crème fraiche on each fillet and top with salsa.
