Sausage And Leek Hash

Serves 4

Ingredients

  • 6 sausages
  • 6 cooked potatoes, sliced
  • 350g cooked, sliced leeks
  • 1 tbsp mustard
  • 100g mature cheddar/gruyere

Method

  1. Cook the sausages. Remove, slice them up and put aside.
  2. Cook the potatoes and leeks on a fairly high heat until the potatoes are brown and crisp.
  3. Toss in the sausages and mustard and cook for a few mins.
  4. Take off the heat and stir in the cheese.
