Roast Chicken With Bay And Lemon
Serves 4
Ingredients
- Butter, for greasing
- 1.6kg chicken
- 1 whole garlic heads, halved through the middle
- 100ml white wine
- 100ml chicken stock
- 2 stems rosemary, broken into sprigs
- 6 bay leaves
- 1 lemon, cut into wedges
Method
- Preheat the oven to 190ÂșC
- Rub the butter on the chicken and then place in a roasting tray surrounded by all the other ingredients.
- Roast for the usual time per weight of chicken.
- Use the remaining pan juices to make a gravy, thickening with cornflour if needed.
