Roast Chicken With Bay And Lemon

Serves 4

Ingredients

  • Butter, for greasing
  • 1.6kg chicken
  • 1 whole garlic heads, halved through the middle
  • 100ml white wine
  • 100ml chicken stock
  • 2 stems rosemary, broken into sprigs
  • 6 bay leaves
  • 1 lemon, cut into wedges

Method

  1. Preheat the oven to 190ÂșC
  2. Rub the butter on the chicken and then place in a roasting tray surrounded by all the other ingredients.
  3. Roast for the usual time per weight of chicken.
  4. Use the remaining pan juices to make a gravy, thickening with cornflour if needed.
