Potato Salad With Red Onion And Pancetta

Serves 4

Ingredients

  • 500g new potatoes, quartered
  • 260g cubed pancetta or bacon
  • 1 small red onion, finely sliced
  • 40g fresh parsley or 1 tsp dried

Vinaigrette:

  • 5 tbsp red wine vinegar
  • 100ml olive oil
  • 1 garlic clove
  • ½ tsp Dijon mustard
  • 1 tsp caster sugar
  • ½ tsp salt
  • ½ tsp pepper

Method

  1. Mix the vinaigrette ingredients together and set aside.
  2. Boil the potatoes until cooked.
  3. Fry the pancetta/bacon until crispy.
  4. Mix together the pancetta/bacon, onion, parsley, vinaigrette and potatoes. Taste for seasoning.
