Potato Salad With Red Onion And Pancetta
Serves 4
Ingredients
- 500g new potatoes, quartered
- 260g cubed pancetta or bacon
- 1 small red onion, finely sliced
- 40g fresh parsley or 1 tsp dried
Vinaigrette:
- 5 tbsp red wine vinegar
- 100ml olive oil
- 1 garlic clove
- ½ tsp Dijon mustard
- 1 tsp caster sugar
- ½ tsp salt
- ½ tsp pepper
Method
- Mix the vinaigrette ingredients together and set aside.
- Boil the potatoes until cooked.
- Fry the pancetta/bacon until crispy.
- Mix together the pancetta/bacon, onion, parsley, vinaigrette and potatoes. Taste for seasoning.
