Potato and Lemon Casserole
Serves 4
Ingredients
- 2 red onions, cut into wedges
- 3 garlic cloves, crushed
- 2 tsp ground cumin
- 2 tsp ground coriander
- pinch of cayenne
- 1 carrot, thickly sliced
- 2 small turnips, quartered
- 1 courgette, sliced
- 500g potatoes, thickly sliced
- juice and grated rind of 2 large lemons
- 300ml vegetable stock
- 2 tbsp chopped fresh coriander
Method
- Sauté the onions for about 3 minutes. Add the garlic and cook for 30 seconds. Stir in the cumin, coriander and cayenne and cook for 1 minute.
- Add the carrot, turnips, courgette and potatoes. Stir until well coated in the spices.
- Add the lemon juice, rind and stock. Cover and cook for 20-30 minutes until tender.
- Sprinkle with the fresh coriander and serve.
