Potato and Lemon Casserole

Serves 4

Ingredients

  • 2 red onions, cut into wedges
  • 3 garlic cloves, crushed
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • pinch of cayenne
  • 1 carrot, thickly sliced
  • 2 small turnips, quartered
  • 1 courgette, sliced
  • 500g potatoes, thickly sliced
  • juice and grated rind of 2 large lemons
  • 300ml vegetable stock
  • 2 tbsp chopped fresh coriander

Method

  1. Sauté the onions for about 3 minutes. Add the garlic and cook for 30 seconds. Stir in the cumin, coriander and cayenne and cook for 1 minute.
  2. Add the carrot, turnips, courgette and potatoes. Stir until well coated in the spices.
  3. Add the lemon juice, rind and stock. Cover and cook for 20-30 minutes until tender.
  4. Sprinkle with the fresh coriander and serve.
