Pork With Balsamic And Lemon Sauce

Serves 2

Ingredients

  • 1 large lemon, juice only
  • 1 clove garlic
  • 1 tbsp honey
  • 2 tbsp sugar
  • 1 tbsp balsamic vinegar
  • handful coriander (dried or fresh)
  • 300 g diced pork

Method

  1. Dice the pork and then fry with the crushed garlic.
  2. Remove the pork but not the garlic.
  3. Then add the lemon juice, sugar, honey and balsamic vinegar and reduce it.
  4. Once the reduction is complete put your pork back in and warm through.
  5. Just before serving, add coriander.
  6. Serve with stir-fried carrots, mushrooms and broccoli.
