Pork Steaks With Creamy Mustard Sauce

Serves 4

Ingredients

  • 4 thin boneless pork steaks
  • 1 ½ oz. butter
  • 1-2 tbsp olive oil
  • 2 large, peeled cloves of garlic, squashed flat
  • 2 tbsp chopped fresh parsley
  • 6oz. double cream
  • 1½ tbsp Dijon mustard and 1 ½ tbsp coarse ground French mustard
  • 1 tsp lemon juice or wine vinegar

Method

  1. Melt the butter in a pan, add oil and garlic cool until soft (1-2 min)
  2. Add pork steaks and cook on both sides until golden, turning once. This takes approx. 6-8 min.
  3. Discard garlic. Take out pork and keep warm. Discard all but one tbsp of pan juices. Add to this the chopped parsley, cream, mustards and stir, bring to boil and add lemon juice.
  4. Turn down heat, season and pour over chops.
  5. Can be served with jacket potatoes, new potatoes or rice.
