Pork Chops With Thyme, Lemon And Pesto
Serves 4
Ingredients
- 1 handful of thyme, picked (or 2 tsp dried thyme)
- salt and pepper
- 4 cloves of garlic
- zest and juice of one lemon
- 1tbsp olive oil
- 4 chops
- 1 pesto recipes
Method
- Using a pestle and mortar (or finely chop) the thyme with some salt.
- When pulped, add the garlic and some pepper and pound again.
- Stir in the lemon juice, zest and olive oil.
- Smear over the chops and leave for at least 10 mins.
- Place chops on a very hot griddle or frying pan. Cook through.
- Spoon some pesto over them.
