Penne All'Arrabbiata

Serves 4

Ingredients

  • 1 small onion, finely sliced
  • fresh/dried chilli, about 2, finely chopped
  • 1 garlic clove
  • 600g tomatoes, peeled (water!) and finely chopped
  • 6 basil leaves or 3 tbsp parsley
  • penne
  • salt

Method

  1. Fry onion, chilli and garlic for 1 min.
  2. Stir in tomatoes and cook, not violently, for 6-8 mins, then add basil/parsley and some salt.
  3. Add to pasta.
