Peach And Blue Cheese Salad

Serves 4

Ingredients

  • ½ ciabatta loaf or baguettine, sliced
  • 2 tbsp olive oil
  • 1 tsp lemon juice
  • 1 bag mixed leaves
  • handful mint leaves, torn
  • 4 peaches, cut into pieces
  • 140g blue cheese, cut into chunks
  • 100g sugar snaps, sliced

Method

  1. Toast the bread in the toaster or under the grill. Drizzle with 1 tbsp of the oil.
  2. Make the dressing by whisking together the remaining oil, honey and lemon juice, then season to taste.
  3. Mix all of the other ingredients together in a large bowl and toss with the dressing before serving.
