Pea and Mint Soup

Serves 4

Ingredients

  • 1 bunch spring onions, trimmed and roughly chopped
  • 1 medium potato, peeled and diced
  • 1 garlic clove, crushed
  • 850ml veg. or chicken stock
  • 250g peas
  • 4 tbsp fresh mint/1 tsp dried mint
  • large pinch caster sugar
  • 1 tbsp lemon/lime juice

Method

  1. Put the spring onions, potatoes, garlic and stock in a pan and bring to the boil. Simmer until the potatoes are soft.
  2. Add the peas and simmer until cooked.
  3. Stir in mint, lemon/lime and sugar. Liquidise.
  4. (You can garnish with some cooked peas before serving)
