Ingredients
- 1 bunch spring onions, trimmed and roughly chopped
- 1 medium potato, peeled and diced
- 1 garlic clove, crushed
- 850ml veg. or chicken stock
- 250g peas
- 4 tbsp fresh mint/1 tsp dried mint
- large pinch caster sugar
- 1 tbsp lemon/lime juice
Method
- Put the spring onions, potatoes, garlic and stock in a pan and bring to the boil. Simmer until the potatoes are soft.
- Add the peas and simmer until cooked.
- Stir in mint, lemon/lime and sugar. Liquidise.
- (You can garnish with some cooked peas before serving)
