Pasta, Spicy Sausage And Mushrooms

Serves 4

Ingredients

  • 1 onion, peeled and finely chopped
  • 2 cloves of garlic, peeled and finely chopped
  • 255g spicy sausage
  • olive oil
  • 2 handfuls fresh thyme
  • 1-2 small dried red chillies, crumbled to taste
  • 400g mushrooms
  • pasta
  • salt and pepper
  • 1 handful of chopped parsley

Method

  1. Fry the onion, garlic and sausage meat in a little olive oil until golden
  2. Add thyme, chillies and mushrooms
  3. Continue to fry cooking away any moisture from the mushrooms
  4. Cook the pasta in boiling water
  5. Toss the drained pasta with the rest of the ingredients
  6. Sprinkle with parsley and Parmesan to garnish
