Pasta, Spicy Sausage And Mushrooms
Serves 4
Ingredients
- 1 onion, peeled and finely chopped
- 2 cloves of garlic, peeled and finely chopped
- 255g spicy sausage
- olive oil
- 2 handfuls fresh thyme
- 1-2 small dried red chillies, crumbled to taste
- 400g mushrooms
- pasta
- salt and pepper
- 1 handful of chopped parsley
Method
- Fry the onion, garlic and sausage meat in a little olive oil until golden
- Add thyme, chillies and mushrooms
- Continue to fry cooking away any moisture from the mushrooms
- Cook the pasta in boiling water
- Toss the drained pasta with the rest of the ingredients
- Sprinkle with parsley and Parmesan to garnish
