Pasta, Broccoli and Mushroom Casserole with Cashew/Pimento Cheese

Ingredients
For the “cheese”
- 225g cashews
- 400g pimentos
- juice 1/2 lemon
- 3 tbsp vegetable oil
- 4 tbsp nutritional yeast
- 2 tbsp water
- 1-2 tbsp soy sauce
For the pasta
- 340g pasta shells
- 340g broccoli
- 2 onions, sliced
- 2 cloves garlic, crushed
- 340g mushrooms, sliced
Method
- Put all the ingredients for the “cheese” into a food processor and blend thoroughly.
- Preheat the oven to 180 degrees C.
- Cook the pasta until just tender and drain.
- Cook the broccoli until just tender and drain.
- Sauté the onions and garlic until soft, then add the mushrooms and cook for a few minutes longer.
- Mix the “cheese”, pasta, broccoli and mushroom mixture in a casserole dish and bake for 1/2 an hour.
