Pasta, Broccoli and Mushroom Casserole with Cashew/Pimento Cheese

Serves 4

Ingredients

For the “cheese”

  • 225g cashews
  • 400g pimentos
  • juice 1/2 lemon
  • 3 tbsp vegetable oil
  • 4 tbsp nutritional yeast
  • 2 tbsp water
  • 1-2 tbsp soy sauce

For the pasta

  • 340g pasta shells
  • 340g broccoli
  • 2 onions, sliced
  • 2 cloves garlic, crushed
  • 340g mushrooms, sliced

Method

  1. Put all the ingredients for the “cheese” into a food processor and blend thoroughly.
  2. Preheat the oven to 180 degrees C.
  3. Cook the pasta until just tender and drain.
  4. Cook the broccoli until just tender and drain.
  5. Sauté the onions and garlic until soft, then add the mushrooms and cook for a few minutes longer.
  6. Mix the “cheese”, pasta, broccoli and mushroom mixture in a casserole dish and bake for 1/2 an hour.
