Ingredients
- 110g plain flour, sifted
- salt
- 2 eggs
- 200ml milk
- 75ml water
- butter, melted
Method
- Sift the flour and the salt into a bowl.
- Make a well in the centre of the flour, break the eggs into it and whisk together.
- Mix the water and the milk together and gradually add to the flour mix, whisking all the time.
- Heat the (small) frying pan with some of the butter until very hot, then reduce the temperature. Add a serving spoon (about 2 tbsp) of batter into the pan, to check that it is the right amount.
- Cook the pancake and flip! Add more butter with each new pancake.
