Pancakes

Serves 2-4

Ingredients

  • 110g plain flour, sifted
  • salt
  • 2 eggs
  • 200ml milk
  • 75ml water
  • butter, melted

Method

  1. Sift the flour and the salt into a bowl.
  2. Make a well in the centre of the flour, break the eggs into it and whisk together.
  3. Mix the water and the milk together and gradually add to the flour mix, whisking all the time.
  4. Heat the (small) frying pan with some of the butter until very hot, then reduce the temperature. Add a serving spoon (about 2 tbsp) of batter into the pan, to check that it is the right amount.
  5. Cook the pancake and flip! Add more butter with each new pancake.
