Oregano And Cinnamon Roast Chicken

Ingredients
- 1.4 kg chicken
- olive oil
- 1 beef tomato, sliced
- 1 large onion, sliced
- 1½ heaped tsp dried oregano
Method
- Heat oven to 180ºC/160ºC fan.
- Place the chicken in a roasting tin and rub in some olive oil. Season with the oregano, cinnamon, slat and pepper.
- Place the tomato slices over the breast and legs. Place the onion slices around the chicken.
- Drizzle with olive oil and roast for 1½ - 1¾ hours. Let it rest for 10 mins before carving.
