Oregano And Cinnamon Roast Chicken

Serves 4

Ingredients

  • 1.4 kg chicken
  • olive oil
  • 1 beef tomato, sliced
  • 1 large onion, sliced
  • 1½ heaped tsp dried oregano

Method

  1. Heat oven to 180ºC/160ºC fan.
  2. Place the chicken in a roasting tin and rub in some olive oil. Season with the oregano, cinnamon, slat and pepper.
  3. Place the tomato slices over the breast and legs. Place the onion slices around the chicken.
  4. Drizzle with olive oil and roast for 1½ - 1¾ hours. Let it rest for 10 mins before carving.
  5. Serve with Cumin potatoes (see recipes).
