Orange And Rosemary Glazed Turkey
Serves 8-10
Ingredients
- 4.5-5kg turkey/chicken
- 2 oranges
- 50g softened butter
- 1 tbsp. chopped fresh rosemary
- salt and pepper
- 250g stuffing (lemon and sausagemeat)
- 1 onion
Method
- Heat oven to 190ºC.
- Grate the zest from one of the oranges and mix into the softened butter with the rosemary, salt and pepper.
- Season inside the turkey. Quarter both the oranges and the onion and put inside the body cavity of the turkey.
- Stuff the neck of the turkey with stuffing (if desired).
- Place the turkey in a roasting tin and spread the orange butter generously over the breast and legs.
- Tie the legs together to give it a good shape and cover it with a tent of loose foil. Don’t seal it around the roasting tin or it will steam the bird.
- Roast the turkey for the calculated time, basting every hour.
- 40 mins before the turkey is ready, remove the tin foil. You may also want to bake some sausagemeat patties at this time.
- Remove the turkey from the oven and cover tightly with the foil. Leave to rest for at least 20 mins.
