Oatmeal Raisin Cookies

Serves 10-12

Ingredients

  • 150g plain flour
  • 150g porridge oats
  • 1 tsp ground ginger
  • ½ tsp baking powder
  • 150g light brown sugar
  • 50g raisins
  • 1 egg, lightly beaten
  • 125ml vegetable oil
  • 4 tbsp milk

Method

  1. Preheat oven to 200ºC.
  2. Mix together the flour, oats, ginger, baking powder, sugar and raisins in a large bowl.
  3. In another bowl, mix together the egg, oil and milk.
  4. Make a well in the dry ingredients and pour in the egg mixture. Mix togther well to make a soft dough.
  5. Place spoonfuls of the dough well apart onto a baking sheet and flatten slightly. Bake until golden, about 10 minutes.
  6. Eat!
