No Egg Chocolate Mousse

Serves 4

Ingredients

  • 150g marshmallows
  • 50g butter
  • 250g dark chocolate (70% cocoa solids min)
  • 60ml hot water from recently boiled kettle
  • 284ml double cream
  • 1 tsp vanilla extract

Method

  1. Melt the marshmallows, butter, chocolate and water together on very low heat stirring occasionally.
  2. Whip the cream with vanilla extract and then fold this in when the chocolate mixture has cooled.
  3. Pour mixture into serving glasses/bowls/ramekins as required and chill in fridge until you want to eat them!
