Mexican Beef Fajitas

Ingredients

  • 225g beef (or chicken), cut into strips
  • 142ml soured cream
  • 1 lettuce, finely shredded
  • 1 large onion
  • 1 ½ peppers, thinly sliced
  • 6 tortillas

Salsa:

  • 1 green chilli
  • 1 small, red onion, very finely chopped
  • 200g chopped tomatoes
  • juice 1 lime
  • 20g fresh coriander, chopped

Method

  1. Mix the salsa ingredients together and season. Spoon the cream into a bowl and chop the lettuce up ready.
  2. Fry the onion and peppers (seasoning?) and stir-fry over a high heat for 5 mins until soft and slightly browned. Set aside.
  3. Stir-fry the beef for 3-4 mins until well browned.
  4. Return the pepper/onion mix to the steak and rewarm.
  5. Warm the tortillas and serve.
