Melting Shortbread

Serves 12

Ingredients

  • 225g butter
  • 100g icing sugar
  • 225g plain flour
  • 100g cornflour
  • Pinch of salt
  • Caster sugar to decorate

Method

  1. Pre-heat the oven to 170ºC
  2. Cream the butter and sugar together until light and fluffy. Work in the flour and cornflour and salt to make a smooth dough.
  3. Press into a greased, non-stick 17.5 X 27.5 cm tin.
  4. Bake for 40 minutes, keep looking after 30 mins. When golden and firm to touch it’s done.
  5. Sprinkle with caster sugar and leave in tin until cold then cut into squares.
