Melting Shortbread
Ingredients
- 225g butter
- 100g icing sugar
- 225g plain flour
- 100g cornflour
- Pinch of salt
- Caster sugar to decorate
Method
- Pre-heat the oven to 170ºC
- Cream the butter and sugar together until light and fluffy. Work in the flour and cornflour and salt to make a smooth dough.
- Press into a greased, non-stick 17.5 X 27.5 cm tin.
- Bake for 40 minutes, keep looking after 30 mins. When golden and firm to touch it’s done.
- Sprinkle with caster sugar and leave in tin until cold then cut into squares.
