Meatballs In A Rich Tomato And Vegetable Sauce

Ingredients

Meatballs

  • 450g of minced beef
  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • 100g fresh wholemeal breadcrumbs
  • 1 tsp ground allspice
  • 2 tbsp olive oil

Tomato sauce

  • 1 large onion, chopped
  • 3 courgettes, sliced
  • 2 large red peppers, chopped
  • 800g tinned tomatoes
  • 2 cloves garlic, finely chopped
  • 1 tsp dried oregano
  • 1 tsp chopped fresh basil

Method

  1. Make the meatballs:
  2. Place the beef, onion and garlic into a food processor and blend into a fine paste.
  3. Add breadcrumbs, allspice, salt and pepper to taste and mix well.
  4. Divide mixture into eight and shape into balls.
  5. Sauté in a dash of olive oil over a medium heat, for about 15 minutes.
  6. Make the sauce: Sauté the onion until softened.
  7. Add the courgettes and peppers. Sauté.
  8. Add the tomatoes, garlic, oregano, basil and a little salt and pepper and simmer for 10 minutes or until cooked.
  9. Serve together.
