Meatballs In A Rich Tomato And Vegetable Sauce

Ingredients
Meatballs
- 450g of minced beef
- 1 onion, chopped
- 2 cloves garlic, finely chopped
- 100g fresh wholemeal breadcrumbs
- 1 tsp ground allspice
- 2 tbsp olive oil
Tomato sauce
- 1 large onion, chopped
- 3 courgettes, sliced
- 2 large red peppers, chopped
- 800g tinned tomatoes
- 2 cloves garlic, finely chopped
- 1 tsp dried oregano
- 1 tsp chopped fresh basil
Method
- Make the meatballs:
- Place the beef, onion and garlic into a food processor and blend into a fine paste.
- Add breadcrumbs, allspice, salt and pepper to taste and mix well.
- Divide mixture into eight and shape into balls.
- Sauté in a dash of olive oil over a medium heat, for about 15 minutes.
- Make the sauce: Sauté the onion until softened.
- Add the courgettes and peppers. Sauté.
- Add the tomatoes, garlic, oregano, basil and a little salt and pepper and simmer for 10 minutes or until cooked.
- Serve together.
