Maple Chicken 'N' Ribs

Serves 6-8

Ingredients

  • 12 pork spare ribs
  • 12 chicken thighs
  • 250 mL apple juice as sharp as possible
  • 4 tbsp maple syrup
  • 2 tbsp veg oil
  • 2 tbsp soy sauce
  • 2 star anise
  • 1 cinnamon stick, halved

Method

  1. Put the ribs and chicken in a couple of large freezer bags or into a dish.
  2. Add the remaining ingredients, squelching everything together well.
  3. Leave to marinate in a fridge overnight or up to 2 days
  4. When marinating time is up, preheat the oven to 200ºC.
  5. Pour the contents of the freezer bag into one or two large roasting tins. Cook for about 1¼ hour by which time everything should be sticky and conker brown.
