Lemon And Sausagemeat Stuffing

Serves 8-10

Ingredients

  • 500g pack sausages or sausagemeat
  • 1 lemon, zested
  • 25g butter
  • 1 tbsp. olive oil
  • 1 onion, chopped
  • good handful of parsley, chopped
  • 2 tsp. chopped fresh thyme leaves
  • 175g white or brown breadcrumbs
  • (8 rashers bacon)

Method

  1. Heat the oil and butter in a pan and fry the onion until lightly browned.
  2. If using sausages, cut the skins down the length and remove the meat. Break the sausagemeat into a bowl.
  3. Finely grate the lemon zest into the bowl.
  4. Tip the onions, herbs and breadcrumbs into the bowl, with salt and pepper, and mix well with your hands.
  5. Stuffing:
  6. Use half of this mixture in a turkey for 8-10 people
  7. Patties:
  8. Take half the mixture and shape into 8 round, flat patties.
  9. Tie a rasher of bacon around each.
  10. Cook at 190ºC for 40 mins or put in around the chicken/turkey for this length of time.
  11. Slices:
  12. Line a loaf tin with 8 rashers of bacon.
  13. Pack the stuffing into a loaf tin and bake in the oven (190ºC) for 45 mins.
  14. Cool in the tin for 10 mins, turn out and cut into thick slices.
