Kofta kebabs

Serves 8

Ingredients

  • 175g aduki beans
  • 175 bulgar wheat
  • 450ml vegetable stock
  • 1 onion, chopped
  • 2 garlic cloves
  • 1 tsp coriander
  • 1 tsp cumin
  • 2 tbsp chopped fresh corinader
  • 3 eggs
  • 125g dried breadcumbs

Method

  1. Cook aduki beans in boiling water until tender (about 40 mins)
  2. Cook bulgar wheat in stock until absorbed (about 10 mins)
  3. Fry the onion, garlic and dried spices for 5 mins
  4. Mix the beans, the onion mixture, eggs and coriander together and mash with a fork or potato masher. Season with salt and pepper. Add the bulgar wheat and breadcrumbs. Mix.
  5. Cover and chill for 1 hour until firm.
  6. Press on to skewers, brush with oil, grill until golden (5-6 mins). Turn and repeat. Alternatively bake in the oven until done.
