Ingredients
- 175g aduki beans
- 175 bulgar wheat
- 450ml vegetable stock
- 1 onion, chopped
- 2 garlic cloves
- 1 tsp coriander
- 1 tsp cumin
- 2 tbsp chopped fresh corinader
- 3 eggs
- 125g dried breadcumbs
Method
- Cook aduki beans in boiling water until tender (about 40 mins)
- Cook bulgar wheat in stock until absorbed (about 10 mins)
- Fry the onion, garlic and dried spices for 5 mins
- Mix the beans, the onion mixture, eggs and coriander together and mash with a fork or potato masher. Season with salt and pepper. Add the bulgar wheat and breadcrumbs. Mix.
- Cover and chill for 1 hour until firm.
- Press on to skewers, brush with oil, grill until golden (5-6 mins). Turn and repeat. Alternatively bake in the oven until done.
