Flummery

Serves 6-8

Ingredients

  • 135g pack jelly (raspberry or strawberry work well), broken into pieces
  • 350ml evaporated milk

Method

  1. Mix the jelly with 250ml boiling water until it has dissolved. Pour into a bowl and leave to cool.
  2. Beat the evaporate milk in a stand mixer until fluffy.
  3. Gradually add the cooled jelly mixture to the whipped evaporated milk, beating continuously until well combined.
  4. Pour into individual serving dishes and chill in the fridge for at least 2 hours before serving.
