Fluffy Pittas

Serves 8

Ingredients

  • 200ml milk
  • 100ml lukewarm water
  • 1 tbsp caster sugar
  • 2 tsp salt
  • 1 tbsp olive oil
  • 500g strong shite bread flour
  • 2 tsp thyme leaves (optional)
  • 7g sachet fast action dried yeast

Method

  1. Mix all the ingredients together in a bread maker
  2. Run on dough cycle
  3. Divide the dough into 8 balls and leave to prove again (if you have time)
  4. Taking the dough balls one at a time, roll flat on an oiled work-surface and fry in a hot pan for 2-3 mins each side until blistered in places.
  5. Keep pittas warm under a cloth whilst you cook the rest.
