Exotic Fruit Mousse

Serves 4

Ingredients

  • 2 passion fruit
  • 125g white chocolate
  • 200ml of creme fraiche

Method

  1. Melt the chocolate over a bain marie.
  2. Stir in the creme fraiche.
  3. Put in ramekin dishes or glasses. Put in fridge
  4. Just before serving cut passion fruits in half, scoop out pulp and seeds and put half of one over each mousse
