Dutch Salad

Serves 6-8

Ingredients

  • 125g rice
  • 175g ham
  • 1 leek, white part only, cut into very small pieces
  • 1 mango, cut into slices
  • 125g cheese, cubed
  • 250g white grapes, halved
  • 125ml creme fraiche
  • 2 tbsp maynonnaise
  • 1 1/2 tbsp mango chutney
  • 1 1/2 tsp curry powder

Method

  1. Cook the rice and leave to cool.
  2. Mix together the rice, ham, leek, mango, cheese and grapes.
  3. Make a sauce with the remaining ingredients and mix together with the rice mixture.
