Crispy Chicken And Asparagus Pie

Serves 4

Ingredients

  • 4 chicken breasts, cut into bite size pieces
  • 100g asparagus, cut into bite size pieces
  • 100g green spring vegetables, e.g. spinach, peas
  • 100g ham, torn
  • 100ml low fat crème fraiche

Method

  1. Heat grill to medium. Spread the chicken out evenly in a shallow baking dish and grill for 7-10 minutes, turning occasionally, until cooked through.
  2. Meanwhile, put the vegetables in a bowl and pour a kettle of boiling water over them. Leave for 2-3 minutes and then drain.
  3. Scatter the vegetable and ham over the chicken. Dollop over the crème fraiche and season to taste.
  4. Sprinkle over the breadcrumbs and then slide under the grill for 5 minutes more, until heated through and the topping is crisp.
