Chocolate Chestnut Refrigerator Cake

Serves 10-12

Ingredients

  • 500g sweetened chestnut puree
  • 175g butter, softened
  • 300g dark chocolate
  • 3 tbsp dark rum

to serve

  • creme fraiche

Method

  1. Beat the purée in a bowl until it is smooth, then blend in the butter.
  2. Melt the chocolate and let is cool slightly before adding it to the chestnut and butter. Beat in the rum.
  3. Spoon the mixture in a loaf tin lined with cling film. Put in the fridge for at least 4 hours to set.
