Chilli Coconut Pork With Vegetable Noodle Salad

Ingredients
- pork, 400g, diced
- 1 tbsp curry paste/2 tsp curry powder
- 2 tbsp peanut butter
- 200ml coconut cream
- 300ml vegetable stock
- rice/noodles
- veg – e.g. sweetcorn, peppers, onion and carrot (enough for everyone), diced
- 3 tbsp sweet chilli dipping sauce
- zest and juice of 1 lime
Method
- Cook the rice/noodles.
- Seal the pork.
- Stir in the curry paste/powder and cook for 1 min until fragrant.
- Stir in the peanut butter, stock and coconut cream.
- Bring to the boil and then simmer until pork is cooked and sauce has thickened.
- Meanwhile, stir-fry the vegetables.
- When the rice is cooked, mix in with the veg and sweet chilli sauce.
- Stir lime zest and juice into the pork before serving.
