Chilli Coconut Pork With Vegetable Noodle Salad

Serves 4

Ingredients

  • pork, 400g, diced
  • 1 tbsp curry paste/2 tsp curry powder
  • 2 tbsp peanut butter
  • 200ml coconut cream
  • 300ml vegetable stock
  • rice/noodles
  • veg – e.g. sweetcorn, peppers, onion and carrot (enough for everyone), diced
  • 3 tbsp sweet chilli dipping sauce
  • zest and juice of 1 lime

Method

  1. Cook the rice/noodles.
  2. Seal the pork.
  3. Stir in the curry paste/powder and cook for 1 min until fragrant.
  4. Stir in the peanut butter, stock and coconut cream.
  5. Bring to the boil and then simmer until pork is cooked and sauce has thickened.
  6. Meanwhile, stir-fry the vegetables.
  7. When the rice is cooked, mix in with the veg and sweet chilli sauce.
  8. Stir lime zest and juice into the pork before serving.
