Chestnuts with Herbed Garlic Salt

Serves 6

Ingredients

  • For the chestnuts
  • 200g pack peeled, whole chestnuts
  • vegetable oil

For the herbed garlic salt

  • 1 tsp finely chopped sage
  • 1 clove garlic, crushed
  • 25g Maldon salt
  • 1 tsp black peppercorns, crushed

Method

  1. First make the seasoned salt by mixing all the ingredients together. Leave to infuse for at least a couple of hours. Sit occasionally to let the garlic dry out.
  2. Sauté the chestnuts in the hot oil for 4-5 minutes, until very hot, crisp and slightly darkened on the outside.
  3. Serve with a small dish for the salt, so the chestnuts can be dipped in as desired.
