Celeriac remoulade

Serves 4-6

Ingredients

  • 300g celeriac
  • 35g wholegrain mustard
  • 1 tsp capers, finely chopped
  • 25g gherkins, finely chopped
  • Juice of 1 lemon
  • 2 tsp parsley, finely chopped
  • 4 springs tarragon, leaves picked
  • 150g mayonnaise

Method

  1. Peel the celeriac and shred very finely. Place in a bowl and add the mustard, capers, gherkins, lemon juice and herbs.
  2. Stir in the mayonnaise and season.
