Celeriac remoulade
Ingredients
- 300g celeriac
- 35g wholegrain mustard
- 1 tsp capers, finely chopped
- 25g gherkins, finely chopped
- Juice of 1 lemon
- 2 tsp parsley, finely chopped
- 4 springs tarragon, leaves picked
- 150g mayonnaise
Method
- Peel the celeriac and shred very finely. Place in a bowl and add the mustard, capers, gherkins, lemon juice and herbs.
- Stir in the mayonnaise and season.
